Mountain biking / e-biking is new to me but looking for ideas on a fat tire e-bike build for western hunting. Any good ideas on a good bike brand / model to convert to an e-bike that is cost effective versus a ready made hunting e-bike? Am I going to save any money going the custom build route vs the ready made bike? Thanks.

I'm loving my Mongoose Argus Sport 26 with a BBSHD and 52v 28Ah battery. There's nowhere it can't go with those huge 4.8" wide tires, and I easily get 75 miles per charge before the battery starts getting weak. I can't recommend Bafang conversion kits highly enough, and Johnny is a great guy to buy from. I had a horrible experience last year with a prefab eBike from a very reputable manufacturer, and also with the warranty replacement they sent after the original bike croaked. My DIY eBike is superior in every way to the prefab lemon, and I have around $1000 less invested in it. Plus, if something goes wrong with this bike, I can fix it myself with easily available and reasonably priced parts without having to wait months for warranty issues to be resolved. It's DIY from now on for me, especially since I've gotten a taste of how much fun it is to build your own custom eBike. And FYI when it comes to mudguards, get Mucky Nutz products made especially for fat bikes. I need to take new pics of my beast since I swapped out the pitiful little mudguards I originally installed.
