Seeking advice and guidance on my hunting E-bike build. I hunt in a very remote, rocky & hilly area in Canada… so reliably, power, range & cold weather operation are priorities.
I plan on getting a fat bike and building myself (I’m an Electrician, former road racer and have wrenched on many bikes)

I'm at the front end of designing/building something similar, although my target usage is bike touring, not quite as extreme as your hunting expeditions will be. I'll probably to with a BBSHD which I could 'turn down' for legal road use.
I'm curious what you settled on for a frame?
Also, what did you do for wheels? Given that I'll be hauling 400 lbs (ish) up mountain roads, I'm quite concerned about the whole 'too-much-torque-on-drivetrain' problem, extending all the way to the rear hub components and spokes and rims.
Seems like your build will be even more demanding of those components.
sounds like a beast of a fat ebike project. it comes down to finding the frame that meets those requirements, and mounting a compatible motor kit on it. there are CYC and cyclone motors which have 3000w motor options, with lots of power for a heavy fat tire bike. research will help, theres a lot of videos with these on youtube im sure.
